roast potatoes with rosemary and fat

Yes, I am a student nutritionist and yes, I do enjoy roast potatoes baked in a little fat. Occasionally haha. It's not an everyday thing and I always make sure I buy grass fed or organic beef dripping to make sure I am getting the best quality nutrients in the fat.

I hope you enjoy this recipe! I also like to heat up the leftover potatoes to have for breakfast with a couple of eggs in the morning. Yum!

roast potatoes with rosemary and fat


  • 1 kg potatoes
  • 1-2 tbs fresh rosemary
  • 1-2 tbs grass fed or organic beef dripping
  • salt to taste

Prep and cooking time , Serves 4.


  1. Pre-heat a moderate oven
  2. Chop the fresh rosemary and place it into a large bowl
  3. Melt the beef dripping in a small over proof dish in the oven
  4. Chop the potatoes into chunks and place them into the bowl
  5. Once the beef dripping has melted, pour it over the potatoes and using your hands or a spoon toss the mix well
  6. Spread the potatoes on a baking tray and bake in the oven for about 45 mins until they are crispy on the outside and soft and fluffy on the inside
  7. Remove the tray from the oven and sprinkle over the salt before serving
